Country Ribs

This is from Crystal, many years ago and everyone loves it!

Ingredients:

1 package of pork "country ribs"
a small can of tomato sauce
a small can of crushed pineapple, in its own juice
ginger, soy sauce, vinegar, brown sugar

Procedure:

Cover a baking sheet with foil, and place a rack on that.  Separate the ribs and put them on the rack.. sprinkle with salt and pepper.  Roast at 400 degrees for about an hour, turning midway.  This will get some of the fat off.

If you do this a day, a couple of days ahead, let the ribs cool and refrigerate in a plastic bag.

To make the sauce, mix together the tomato sauce, pineapple with the juice, a couple of squirts of soy sauce, two light sprinkles of ginger and a couple of squirts of vinegar.  Pour over the ribs, either in a crockpot for all day cooking, or a foil-lined baking dish.

If using the oven, cover with more foil, and bake at 350 for two hours.  Uncover for the last 15 minutes.
