Yorkshire Pudding

from Time-Life Cooking of the British Isles

2 eggs, egg beaters or 2 egg whites
1 c. milk
1 c. flour
salt
2 T roast beef drippings, or just use Pam

Beat together ingredients and refrigerate for at least one hour.

Heat over to 425, heat fat in a roasting pan until it splutters.  Briefly re-beat batter and pour it into the pan.  

Bake for 15 minutes, reduce heat to 375 and bake another 15 minutes, until pudding is brown.  OR
Bake at 425 35 minutes, cut slit to let steam escape and bake another 5 minutes until very brown and crisp.
